Locally you can go whitewater rafting, canoeing & kayaking on Penrith Lakes and the Nepean River. You can picnic, camp or visit the Euroka Clearing (lots of kangaroos). The local shops are a 10 min walk. There are great restaurants in Penrith and Parramatta.
